Christmas Craziness!

Hey Everyone out there in Bloggerland!

For this week's blog, I thought I would offer you all a recipe in preparation for all the delicious cooking and baking that will be going on this holiday season! Like I mentioned before, Christmas is my favorite time of the year because I get to be in the presence of my family, eating amazing food, and just having a good time!

I don't know about you, but I still believe it is OK to be making pumpkin-related treats throughout the whole holiday season, from Halloween to Christmas! Over the Thanksgiving break, I actually tried out this recipe that I am about to share with you, and it was a HIT with my family, so I thought I would share it with you as well so you can spread some cheer and joy!
They are called pumpkin cheesecake cookies!!! Here is how to make them.

Ingredients:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup butter at room temperature
  • 1 cup sugar
  • 1/2 cup pumpkin
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 cup flour
  • 1 cup cake flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1 or 2 cups of white chocolate chips (optional)

  • Directions:

    1. Preheat oven to 350 degrees F.

    2. In a bowl cream together cream cheese and butter until it is smooth and no lumps remain. Slowly add sugar, pumpkin, vanilla extract and egg.


    3. In a separate bowl, whisk together the combine flours, baking powder, salt, and pumpkin pie spice.

    4. Gradually add the dry ingredients into wet ingredients and combine thoroughly. Allow the dough to cool in refrigerator for 20 minutes.

    5. Scoop the dough onto a cookie sheet lined with parchment paper. 

    6. Bake for 10-12 minutes and let cool for 2-3 minutes before transferring to a wire rack
